I admit, they’re not much to look at. They’re totally flat, and when my little sister first saw them she was completely unimpressed and said it just looked like they’d melted. Everyone (except for my mom, who is familiar with Lace Cookies) thought they were actually baking fails. Until they tried them, that is.
Despite their humble appearance, these cookies are good. Their flat crisp texture reminds me of sweet addictive potato chips and neither Zach nor I could stop eating them.
When you’re baking with so few ingredients, you want to make sure that you are using quality ingredients. The butter is the key ingredient and the key flavor driver for these Lace Cookies, so I obviously recommend using Challenge Butter for this recipe for the best possible taste.
